Mr. Cookie Baker

Every day, Mr. Cookie Baker gets up early to make cookies for everyone in his neighborhood. He makes cookies in the shape of trees, cats, and airplanes, and decorates them with pretty sprinkles.

Cookie Baker Sugar Cookies

Complexity: Mixing dough, baking cookies, decorating.
Time: 15 minutes prep, 4 hours in the fridge, and 40 minutes baking, cooling, and decorating.

Ingredients

  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup sugar
  • 3 eggs
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 8 oz brick cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Directions

  1. Cream together the butter, shortening, and sugar.
  2. Add eggs and beat well.
  3. Sift together dry ingredients. Gradually add dry ingredients to the butter mixture.
  4. When combined, turn out onto parchment or wax paper. Chill for 4 hours.
  5. Spread flour on a clean, flat counter, and put 1/3 of the dough out. Flatten with a rolling pin and use cookie cutters to make cookies into your favorite shapes. Do the same with all the dough until you are out.
  6. As you go through the dough, re-roll and flatten as necessary.
  7. Bake cookies at 425 on a parchment paper-lined cookie sheet for 8-11 minutes until edges just start to turn brown (you'll probably have 4 or 5 batches).
  8. While the cookies are cooling, in a mixer, combine cream cheese and butter until smooth. Add vanilla.
  9. Slowly add powdered sugar and combine until smooth. If you'd like, divide up the cream cheese frosting into several small bowls. Put different food coloring drops in each bowl to make different colored frosting.
  10. Decorate each cookie with different frostings and sprinkles. You can even decorate a cookie like Mr. Cookie Baker's big sunshine cookie at the end of the book.
Note: You will have leftover frosting. It is good to spread on graham crackers and Scooby Snacks.

Cookie Baker Oatmeal Chocolate Chip Cookies

Complexity: Mixing dough, baking cookies.
Time: 15 minutes prep plus 10 minutes baking.

Ingredients

  • ½ cup (1 stick) + 6 tablespoons butter or Smart Balance, softened
  • ¾ cup firmly packed brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoons salt
  • 3 cups old fashioned oats
  • 1 cup chocolate chips

Directions

  1. Heat oven to 350 degrees. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
  2. Add eggs and vanilla; beat well.
  3. Add combined flour, baking soda, cinnamon and salt; mix well.
  4. Add oats and chocolate chips; mix well.
  5. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  6. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
Makes about 4 dozen cookies.
