Cloudy With a Chance of Meatballs

Welcome to Chewandswallow: land where the food falls from the sky. What would umbrellas look like in Chewandswallow?

​Enjoy signature Chewandswallow Pancakes and Spaghetti and Meatballs. Just don’t drop them from the sky! 
 

Cook

Chewandswallow Pancakes

Complexity: Easy mixing and using the griddle.
Time: 15 minutes.

Ingredients

  • 1-1/3 cups all-purpose flour
  • 2/3 cup cornmeal 
  • 2 tablespoons sugar 
  • 1 teaspoon baking powder 
  • 1 teaspoon salt 
  • 2 large eggs
  • 1-1/3 cups milk
  • 1/4 cup canola oil 
  • Generous squeeze of honey

Directions

  1. Mix the dry ingredients in a bowl. 
  2. Add the wet ingredients and whisk until well-mixed. 
  3. Heat a griddle to 375 and drop batter onto griddle. Add chocolate chips, blueberries, slices of pear, nectarines, strawberries, or peaches. Cook until bubbles have popped and flip, continuing to cook until done. Enjoy with fresh fruit, syrup, cinnamon sugar, jam, or homemade applesauce.

Spaghetti and Meatballs

Complexity: Moderately complex, involves the stove.
Time: 30 minutes.

Ingredients

  • Long spaghetti pasta
  • Pasta sauce
  • 1 lb. ground beef
  • 1 large egg, lightly beaten
  • 2 large cloves garlic, minced
  • 2 teaspoons finely grated lemon zest
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon smoked sweet paprika
  • Salt
  • Freshly ground black pepper
  • Olive oil

Directions

  1. Boil water in a pot and toss in the pasta. Cook as directions specify on the box.
  2. Prepare a medium-high gas or charcoal grill fire, or heat a nonstick skillet to medium high.
  3. In a large bowl, break up the ground beef with your hands. Add the egg, garlic, lemon zest, thyme, smoked paprika, 1-1/4 teaspoon salt, and 1/2 teaspoon pepper. Use your hands to gently combine the mixture. Shape into 16 meatballs (each about 1-1/2 inches).
  4. Grill the meatballs until they’re just cooked through, turning once, about 8 minutes. Remove each as it finishes cooking and set aside.
  5. In a separate pot on the stove, warm up some pasta sauce.
  6. Combine cooked pasta, pasta sauce, and 4 meatballs. Makes 4 servings.
