Stinky Cheese Platter

​Complexity: Super simple. Pick some fun cheeses, crackers, and fruits, and assemble!
Time: 5 minutes.

Ingredients

  • Stinkiest cheese you can find from the store
  • Pepper jack cheese
  • Mild cheddar cheese
  • Grapes
  • Strawberries
  • Celery
  • Baby carrots
  • Cucumbers
  • Favorite crackers

Directions

  1. Chop cheeses, fruits, and vegetables.
  2. Place all including the crackers on a tray.
  3. Hold your nose while eating the stinkiest cheese, and gobble up quickly before he can run off!

Apricot, Cheddar, and Little Red Hen Sandwich

​Complexity: Simple – use a store-bought rotisserie chicken, a little chopping, and assemble sandwiches.
Time: 5 minutes.

Ingredients

  • Little Red Hen (1/2 cup shredded rotisserie chicken)
  • Little Red Hen Feathers (2 Bibb lettuce leaves)
  • 4 slices sourdough bread
  • 1/3 cup dried apricots
  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 teaspoons coarsely chopped pistachios
  • 2 slices tomato
  • 2 slices sweet onion
  • 1 teaspoon honey
  • 1 teaspoon stone-ground mustard
  • 1 teaspoon prepared horseradish
  • Salt and pepper to taste

Directions

  1. Set aside the bread slices, tomato and onion slices, and hen feathers (lettuce leaves).
  2. Mix the remaining ingredients in a dish.
  3. Spread the mix on two slices of bread and top them with the tomato and onion slices.
  4. Add the lettuce leaf and cover it with the remaining slices.
  5. Cut in half.
  6. Serve with potato chips.
