The notorious outlaw Kissin’ Kate Barlow was once Miss Katherine Barlow the schoolteacher, who made fabulous spiced peaches every summer for her town. Try making your own Spiced Peaches.

​Miss Katherine fell in love with Sam the Onion Man, who sold raw, sweet onions all over town with his pet donkey, Mary Lou. Use some of Sam’s sweet onions to make a Magnificent Onion Sandwich.

Miss Barlow's Spiced Peaches

Complexity: Easy, mixing spices and grilling peaches.
Time: 15 minutes.

Ingredients

  • 8 peaches
  • ¼ teaspoons nutmeg
  • ¼ teaspoons cinnamon
  • 2 tablespoons brown sugar
  • Olive or canola oil for grill
  • 1 cup heavy whipping cream
  • 3 tablespoons granulated sugar
  • ½ teaspoon vanilla

Directions

  1. Place metal mixing bowl and hand mixer beaters in freezer to cool. 
  2. Heat grill to medium-high heat. Slice peaches in half. Place in a bowl and gently toss with the nutmeg, cinnamon, and brown sugar. 
  3. Oil the grill to prevent sticking and place peach halves face-down on the grill. 
  4. While the peaches are starting to cook, use the metal mixing bowl and hand mixer to start whipping the cream, gradually increasing the speed to maximum. When the cream has approximately doubled in size, stop and add the granulated sugar and vanilla. Continue beating until the cream has whipped, forming firm peaks. 
  5. Flip the peaches after about 5 minutes on the grill (they should now be skin-side down) and continue grilling until they reach desired doneness. They should be soft when pierced with a fork. 
  6. Serve hot peaches with whipped cream.

Sam's Magnificent Onion Sandwich

Complexity: Easy, slicing and sautéing. 
Time: 10 minutes prep plus 30 to 40 minutes cooking. 

Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 2 onions, cut into large chunks
  • ¼ cup chopped cilantro
  • 1 jalapeno, diced (remove seeds if you want it to be less spicy)
  • Large sandwich rolls
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons plus 1 teaspoon red-wine vinegar
  • 2 teaspoon sugar
  • Handful of greens

Directions

  1. Heat the olive oil in a large nonstick skillet over high heat. 
  2. When the oil is hot but not smoking, reduce the heat to medium and add the onions, salt, and pepper. 
  3. Cook until the onions become soft and golden, 30 to 40 minutes. Add the vinegar, jalapeno, and sugar; cook until the liquid is absorbed, about 3 minutes.
  4. Divide among sandwiches and top with cilantro and greens.
