How does a painting become more than the sum of its parts? How do two people become more than the sum of their parts? Meet neighbors Bryce and Juli. Juli is a friendly, tenacious eighth grader who loves trees, animals, and Bryce, the cute boy across the street.

​In sixth grade, Juli adopts chickens and sells their eggs to her neighborhood. Buy a few of Juli’s eggs and make Juli’s Scrambled Eggs and Tortilla Española.

Juli's Scrambled Eggs

Complexity: Easy eggs.
Time: 5 minutes.

Ingredients

  • 3 eggs
  • ½ tablespoon margarine or butter

Directions

  1. Place margarine in the pan, and turn the stove heat up to medium-high. Crack the eggs on a solid surface (not the edge of a bowl) and place them into a bowl. Using a fork, or whisk if you prefer, beat the eggs well. 
  2. When the pan is hot, pour the eggs into the pan. They should make sizzling noises if the pan is hot enough. Use a rubber spatula to push the eggs around, making sure to scrape the bottom and sides of the pan. When the eggs have mostly set but are still noticeably wet, turn the heat off. The latent heat in the pan will finish cooking the eggs as you stir them gently, which will prevent overcooking.

Tortilla Española

Complexity: Easy recipe, but make sure you are prepared for the flipping of the tortilla. 
Time:  45 minutes

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 1/4 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • Kosher salt and freshly ground black pepper
  • 8 extra-large eggs

Directions

  1. Heat the oil in a large cast-iron skillet or nonstick pan over medium-high until very hot but not smoking. 
  2. Add the potatoes and onion, season with salt and pepper, reduce the heat to medium, and cook, stirring occasionally and adjusting the heat so that the vegetables do not brown, until the potatoes are tender when pierced with a fork, 15 to 20 minutes.
  3. Beat the eggs with salt and pepper to taste in a large bowl. 
  4. Combine the potatoes with the eggs in the bowl; add to the skillet, spreading the potatoes evenly in the pan, turn the heat to high, and cook for about 1 minute, just to set the bottom of the egg mixture. 
  5. Reduce the heat to medium-low and cook for 20 minutes, or until set. 
  6. Carefully flip the tortilla over (invert it onto a plate, then slide it back into the pan, bottom side up) and cook for 5 minutes longer, until set. Flip out onto a clean plate and allow to rest for 5 minutes. 
  7. Serve warm or at room temperature, with soup or salad and bread.
