Petey's Bedtime Story

Petey's a cowboy at heart. ​Enjoy a cowboy dinner with Petey before bed with Cowboy Chili, Steamed Broccoli, and Cornbread. 
 

Cook

Cowboy Chili

Complexity: Simple chili, great for kids to help with. Cooking on the stove and some light chopping.
Time: 10 minutes prep plus 10 minutes cooking.

Ingredients

  • ½ cup chopped onion
  • ¼ cup chopped green pepper
  • 1 lb ground beef or veggie beef
  • 16 oz tomato sauce (2 cups)
  • 16 oz kidney beans (2 cups)
  • ½ tsp salt
  • 2 tsp+ chili powder
  • 1 tsp cinnamon (optional)
  • 1 tsp cocoa powder (optional)

Directions

  1. Cook and stir onion, green pepper, and ground beef or veggie beef in sauce pan till meat is lightly browned. If using veggie beef, add 1 Tbs olive oil to help brown. If using meat, spoon off excess fat.
  2. Stir in tomato sauce; cook over low heat for 5 minutes.
  3. Stir in kidney beans and salt. Cook until heated through.
  4. Stir in chili powder and cinnamon or cocoa powder if using. Taste and add more spices as desired. Serve with cornbread and broccoli. Freezes well.

Steamed Broccoli

​Complexity: Chopping and steaming broccoli.
Time: 5 minutes chopping plus 2-4 minutes cooking.

Ingredients

  • Two heads of broccoli

Directions

  1. Chop up broccoli.
  2. Place in a microwave-proof bowl. Cover loosely. Microwave for 2 minutes or until broccoli is desired texture.

Cornbread

Complexity: Simple mixing and baking.
Time: 15 minutes prep plus 24-30 minutes baking.

Ingredients

  • 1 ¼ cups all-purpose flour
  • ¾ cup yellow cornmeal
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ⅓ cup vegetable oil
  • 2 eggs, lightly beaten
  • 2 tablespoons butter, melted and cooled
  • 2 tablespoons honey
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 400 degrees F. Grease 9x9 pan.
  2. In a large bowl, stir together flour, cornmeal, sugar, baking powder, and salt.
  3. In another bowl, stir together milk, oil, eggs, butter, honey, and vanilla until blended.
  4. Make a well in center of dry ingredients; add milk mixture and stir just to combine.
  5. Spoon batter into prepared pan; bake 24 - 30 minutes, or until a toothpick inserted in center comes out clean.
  6. Remove pan and cool on rack. Serve warm, then cool completely and store in an airtight container at room temp. Freezes well.
