Pick up some peaches from the store (hopefully giant peaches) and make Giant Peach Ancho-Pork Skewers and Giant Peach Crumble Cake. James could make a lot of these skewers with his giant peach! Not to mention the peach crumble cake is a summer treat unlike any other.

Giant Peach Ancho-Pork Skewers

Complexity: Easy skewers made on the grill. Use a broiler if a grill isn’t readily available.
Time: 20 minutes prep, 1 hour marinating, plus 10 minutes cooking.

Ingredients

  • 1/4 cup orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons canola oil; more for the grill
  • 2 teaspoons dark brown sugar
  • 2 teaspoons pure ancho chile powder
  • 2 medium cloves garlic, minced
  • Pinch crushed red pepper flakes
  • Kosher salt
  • 1 lb. pork tenderloin, trimmed and cut into 1-inch cubes (or use seitan for vegetarians)
  • 6 peaches, thickly sliced and pitted
  • 8 skewers, 10 inches or longer, soaked in water for 30 minutes if wooden
  • 1 tablespoon chopped fresh cilantro

Directions

  • In a medium bowl, whisk the orange juice, lime juice, oil, sugar, ancho powder, garlic, pepper flakes, and 1/2 teaspoon salt.
  • Add the pork, toss to coat, cover, and refrigerate for at least 1 hour or up to 4 hours.
  • Thread the pork and mango cubes onto the skewers, alternating them and beginning and ending with a piece of pork. 
  • Prepare a medium gas or charcoal grill fire. Alternatively, use the broiler if a grill is not available. Lightly oil the grill grate. Cook the skewers, turning once, until the meat is browned on the outside and nearly cooked through, about 8 minutes. Serve garnished with the cilantro.

Giant Peach Crumble Cake

Complexity: Simple cake. 
time: 20 minutes prep plus 40 minutes baking.

Ingredients

  • 6 cups sliced peeled ripe peaches
  • 1/4 cup packed brown sugar
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon grated lemon peel
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • Topping ingredients:
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 egg, beaten
  • 1/2 cup butter or margarine, melted and cooled
  • Vanilla ice cream, optional

Directions

  1. To peel peaches, dunk in boiling water for 60 seconds. Remove from pot, let cool slightly, and peel skin with your fingers, using caution as peaches will be hot.
  2. Place peaches in a greased shallow 2-1/2-qt. baking dish. 
  3. Combine brown sugar, flour, lemon juice, and peel and cinnamon; sprinkle over the peaches. 
  4. In a bowl, combine flour, sugar, baking powder, salt and nutmeg. Stir in egg until the mixture resembles coarse crumbs. Sprinkle over the peaches. Pour butter evenly over topping. Bake at 375° for 35-40 minutes. Serve with ice cream if desired.
