A Sick Day for Amos McGee

​When he’s sick, help his animal friends tend to Amos by making Get Well Chicken Noodle Soup to eat with him.

Sugar Oatmeal

​Complexity: Just mix and microwave.
Time: 5 minutes.

Ingredients

  • ½ cup oats (old fashioned, not quick-cooking)
  • 1 cup milk, dairy or non-dairy (more or less to taste)
  • Optional Add-ins:
    • Brown sugar
    • Chocolate chips
    • Jam
    • Peanut butter
    • Nutella
    • Frozen berries
    • Shredded sweetened coconut
    • Chopped banana

Directions

  1. Combine oats and milk in a large, microwavable cereal bowl.
  2. Heat in microwave for 2 ½ minutes, watching to avoid overflow.
  3. Careful when removing bowl from the microwave, as it will be hot.
  4. Mix in any of the optional add-ins.

Get Well Chicken Noodle Soup

Complexity: Involves heating on the stove and chopping. Kids can help with stirring and adding to the pot.
Time: 20 minutes prep plus 50 minutes cooking.

Ingredients

  • 2.5 lbs chicken (2 breasts and 4 thighs, bone in, with skin)
  • 4 cups chicken broth
  • 4 medium carrots cut into ½ inch slices (about 2 cups)
  • 4 sticks celery cut into ½ inch slices
  • 1 tsp sugar
  • ¼ tsp pepper
  • 2 cups (1 package) frozen pre-cooked egg noodles

Directions

  1. Heat all ingredients except noodles to boiling in 4-quart Dutch oven (or any heavy-bottomed, large pot).
  2. Reduce heat. Cover and simmer until chicken is done, about 45 minutes. Skim fat as necessary.
  3. Remove chicken from broth. Cool slightly. Remove chicken from bones and skin. Cut chicken into 1 inch pieces.
  4. Add chicken and noodles into broth. Heat until hot, about 5 minutes.
